Vegan MoFo 2014 - Peanut Butter S'mores stuffed French Toast

Hello everyone! So I've been on hiatus for a few months while getting the hang of being a mum, and now I'm ready to get back to blogging tasty recipes! I thought that taking part in Vegan MoFo this year would help me to get back into the swing of things. I haven't got a theme, as we have just moved house and life is rather hectic at the moment, but I will hopefully be posting every weekday in September. I've got lots of lovely recipes planned, so here goes!

I'm a sucker for breakfast foods. Seriously. Breakfast is by far my favorite meal of the day, especially when I get to make something special like this amazing French Toast.

This French Toast is really simple to make but seriously decadent, and ticks all of my sweet treat boxes with ingredients like chocolate, peanut butter and marshmallows!




Peanut Butter S'mores stuffed French Toast
Serves 2

1C almond milk
2Tbsp (heaped) plain flour
2Tbsp sugar
1tsp vanilla bean paste/vanilla extract

4 slices of bread
4Tbsp chocolate peanut butter*
1/3C vegan mini marshmallows

2Tbsp dairy free butter

Dairy free whipped cream & mini dark chocolate chips to serve

In a small jug whisk together the almond milk, flour, sugar and vanilla until very few lumps remain. Pour into a bowl and set aside.

Spread each piece of bread with a tablespoon of chocolate peanut butter and sprinkle evenly with marshmallows. Sandwich together and press down slightly.

Dredge in the batter mixture, allowing the toasts to soak in some of the custard mixture while you melt a tablespoon of butter over a medium heat in a frying pan.

Transfer the toast from the bowl into the frying pan and cook for around 3-5mins on each side, until the french toast is golden brown and sizzling, and the filling is gooey.

To serve place on a plate and sprinkle over a little powdered sugar, finishing with some squirty soy cream and mini chocolate chips if desired.

*if you can't get your hands on chocolate peanut butter use 2Tbsp peanut butter and 2Tbsp vegan chocolate spread

  2. Yay, I'm so glad you're back! I can't wait to read all of your posts. I'm obsessed with breakfast foods, too, and this looks like the best thing ever. Now if only I can manage to hold off until after the wedding diet...
