Here's my weekly segment of What Vegan Kids Eat!
Breakfast
Mini Raspberry Pancakes with Agave, Blueberries & Pineapple
(Pancakes - 1C flour, 1C almond milk, 2tsp baking powder, 1Tbsp oil, 1tsp agave. Mix well and pour 1/4C portions into a greased frying pan, put raspberry pieces on top and flip over once bubbles appear on the surface. Cook for a further minute and serve.)
Snacks
Air Popped Popcorn, Chopped Medjool Dates & Kiwi
Lunch/Dinner
Satay Tofu with Rice Noodles & Peanut Sauce, Papaya Chunks & Blackberries
(Peanut sauce - 1Tbsp smooth peanut butter mixed with a little hot water, liquid aminos & pepper)
Sweet Potato Fries & Ketchup, Avocado & Corn on the Cob
(Sweet Potato Fries - Cut sweet potato into slices and soak in water for an hour. Drain and pat dry before tossing in 1Tbsp cornflour, drizzling with olive oil and baking for 30mins at 200)
Tomato Chick'n Pasta with Vegan Cheese, Strawberries & Mandarin Segments
Mini Hawaiian Pizzas, Raspberries & Mango Chunks
(Mini Pizzas - cut small circles out of flour tortillas and place in a muffin tin, spoon a heaped teaspoon of tomato sauce or puree into each pizza cup and top with some vegan cheese and whatever toppings you like. Bake at 200 for 10-15 minutes)

ReplyDeleteI love this section of your blog. So many great and yummy ideas! I have a question though, regarding the quantity of food. I have one year old who eats far less than what is on your boy's plate. :( Does Hal eat all that? Or does it only look a lot on photos?

Hi Ivana, thanks for your comment! It probably looks like more than it actually is in the photos! The plates are quite small, and Hal usually eats about 80% of what I give him, but some days he's more or less hungry. So long as he's eating some of it I'm happy!
