Peanut Butter Fudge

I decided this year to give mostly handmade gifts for Christmas, and one of the most successful things I made was this delicious Peanut Butter Fudge! It's creamy, sweet and ever so nutty! And the addition of chocolate chips really adds to the flavour! This is the simplest fudge recipe ever! You don't need a sugar thermometer or any fancy equipment! You've gotta give this recipe a try! But it should come with a warning - this fudge could make you take regular trips to the refrigerator, and even if you are making it for friends and family, you may accidentally end up...ahem...eating a third of the batch. Don't feel ashamed...we all do it!


Ingredients

125g Vegan Margarine
500g Brown Sugar
120ml Almond Milk (any non-dairy milk will do)
250g Smooth Peanut Butter
1 Vanilla Pod (seeds)
300g Icing Sugar
100g Dark Chocolate Chips

Melt the butter in a saucepan. Add the brown sugar and milk and simmer until sugar is completely dissolved.

Remove from the heat and stir in the peanut butter & vanilla seeds until well mixed.

Pour into a mixing bowl and stir through the sifted icing sugar until thick and no lumps remain.

Pour into a greased baking tray & spread out evenly. Leave to cool for around 5mins, then sprinkle over the chocolate chips and leave to cool completely.

Pop into the fridge & refrigerate for at least an hour before slicing into little cubes and tasting (devouring) a few to make sure they are good enough to give to friends!
