Vegan MoFo #7 - Vanilla Matcha Granola with Sesame & Mango


I love making my own granola. There are so many endless possibilities for different flavor combinations and different additions, and I recently came up with this amazing Japan-inspired Granola recipe. It's great for a tasty and healthy breakfast, or even as a snack with some soy yogurt and fruit.

Matcha is Green Tea powder that's super potent and super good for you. You can find it in health food shops, Asian supermarkets and online. It's quite expensive, but you don't need much for great flavor, color and goodness!


Vanilla Matcha Granola with Sesame & Mango
Makes 8 cups

4C jumbo oats
1C coconut flakes
1C sesame seeds
1/2C dried mango, chopped
1/4C mini dark chocolate chips
1/2C vegetable oil
1/2C agave syrup
1 1/2Tbsp vanilla bean paste/seeds scraped from a vanilla bean pod
3tsp, heaped matcha tea powder

In a large mixing bowl stir together the oats, coconut and sesame seeds. Whisk together the oil, agave and vanilla in a small jug and pour into the oat mixture. Mix thoroughly until everything is coated and wet. Grease a large baking tray and spread the granola out into one even layer.

Bake the granola at 150 for 30mins, stirring halfway through to make sure everything cooks evenly.

Remove from the oven and leave to cool for a couple of minutes. Sprinkle over the matcha powder and toss to coat until the granola is gloriously green. Leave the granola to cool completely before mixing in the chopped dried mango and the dark chocolate chips.

Store in a large airtight container or mason jar for up to a month.
